Garlic Butter Steak & Eggs with Chimichurri

Ingredients

For the Steak

  • 1 large ribeye steak (10–12 oz)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 2 cloves garlic, minced

For the Eggs

  • 3 eggs
  • 1 tbsp butter
  • Salt and pepper to taste

For the Chimichurri Sauce

  • ½ cup fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp red chili, finely chopped
  • 2 tbsp red wine vinegar
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Chimichurri

  1. In a small bowl, combine parsley, garlic, chili, vinegar, olive oil, salt, and pepper.
  2. Mix well and set aside for at least 15 minutes to allow the flavors to develop.

Step 2: Cook the Steak

  1. Pat the steak dry and season both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the steak for 4–5 minutes per side for medium-rare (adjust cooking time as desired).
  4. Add butter and minced garlic during the last minute of cooking.

  6. Remove from heat and let rest for 5 minutes.
