🧄 Ingredients

1 medium head cauliflower, cut into florets

8 oz (225 g) mushrooms (cremini or button), halved

4 tbsp extra virgin olive oil

5 cloves garlic, thinly sliced or minced

1 tsp smoked paprika
-
½ tsp dried thyme or oregano
-
¼ tsp chili flakes (optional)

Salt & freshly ground black pepper to taste

Zest of ½ lemon

1–2 tbsp fresh lemon juice

2 tbsp fresh parsley, chopped
🔪 Instructions

Preheat oven to 425°F (220°C).
Line a large baking tray with parchment paper. -
Season vegetables
In a bowl, toss cauliflower and mushrooms with olive oil, garlic, paprika, thyme, chili flakes, salt, and pepper. -
Roast
Spread evenly on the tray in a single layer.
Roast 20–25 minutes, stirring once halfway, until golden and tender with crispy edges.(Skillet option below.)

Finish
Remove from oven.
Add lemon zest, lemon juice, and parsley. Toss gently. -
Serve
Taste and adjust seasoning.
