🌿 Garlic Chicken with Broccoli & Spinach

Mediterranean-Inspired Full Recipe


📝 Ingredients (Serves 4)

For the Chicken

  • 500 g (1 lb) chicken breast or thighs, sliced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tbsp olive oil

Vegetables

  • 2 cups broccoli florets

  • 2 cups fresh spinach

  • 1 small onion, finely chopped (optional)

  • 4–5 garlic cloves, minced

Mediterranean Sauce

  • 1 cup chicken broth

  • ½ cup Greek yogurt or ¼ cup cream + ¼ cup yogurt

  • 1 tbsp lemon juice

  • ½ tsp oregano

  • ½ tsp chili flakes (optional)

  • 2 tbsp grated Parmesan or feta (Mediterranean twist!)

For Finishing

  • Extra lemon zest

  • Fresh parsley

  • Olive oil drizzle


👩‍🍳 Instructions

1. Season & Sear Chicken

  1. Mix chicken with:

    • Salt

    • Pepper

    • Paprika

    • 1 tbsp olive oil

  2. Heat a pan on medium-high and sear chicken 4–5 minutes until lightly golden.

  3. Remove chicken and set aside.


2. Sauté Aromatics & Veggies

  1. In the same pan, add a splash of olive oil.

  2. Add chopped onion (if using) and cook 2 minutes.

  3. Add minced garlic and cook until fragrant.

  4. Add broccoli and sauté 3–4 minutes until bright green.


3. Add Spinach & Sauce

  1. Add spinach and let it wilt.

  2. Stir in the sauce mixture:

    • Chicken broth

    • Greek yogurt (or cream/yogurt combo)

    • Lemon juice

    • Oregano

    • Chili flakes

  3. Mix gently until creamy.


4. Combine & Simmer

  • Add chicken back into the pan.

  • Stir to coat evenly.

  • Let it simmer 5–7 minutes until sauce thickens and chicken is cooked through.

  • Add Parmesan or feta for Mediterranean richness.


5. Finish & Serve

Top with:

  • Fresh parsley

  • Lemon zest

  • A drizzle of good-quality extra-virgin olive oil

Serve with:

  • Brown rice

  • Couscous

  • Quinoa

  • Whole-grain pasta

  • Or crusty Mediterranean bread
