🌿 Garlic Chicken with Broccoli & Spinach
Mediterranean-Inspired Full Recipe
📝 Ingredients (Serves 4)
For the Chicken

500 g (1 lb) chicken breast or thighs, sliced

1 tsp salt

½ tsp black pepper

1 tsp paprika

1 tbsp olive oil
Vegetables

2 cups broccoli florets
-
2 cups fresh spinach
-
1 small onion, finely chopped (optional)

4–5 garlic cloves, minced
Mediterranean Sauce
-
1 cup chicken broth
-
½ cup Greek yogurt or ¼ cup cream + ¼ cup yogurt
-
1 tbsp lemon juice
-
½ tsp oregano
-
½ tsp chili flakes (optional)
-
2 tbsp grated Parmesan or feta (Mediterranean twist!)
For Finishing

Extra lemon zest
-
Fresh parsley
-
Olive oil drizzle
👩🍳 Instructions
1. Season & Sear Chicken

Mix chicken with:

Salt
-
Pepper
-
Paprika
-
1 tbsp olive oil
-

Heat a pan on medium-high and sear chicken 4–5 minutes until lightly golden.

Remove chicken and set aside.
2. Sauté Aromatics & Veggies

In the same pan, add a splash of olive oil.

Add chopped onion (if using) and cook 2 minutes.

Add minced garlic and cook until fragrant.

Add broccoli and sauté 3–4 minutes until bright green.
3. Add Spinach & Sauce

Add spinach and let it wilt.

Stir in the sauce mixture:

Chicken broth
-
Greek yogurt (or cream/yogurt combo)

Lemon juice
-
Oregano
-
Chili flakes
-

Mix gently until creamy.
4. Combine & Simmer

Add chicken back into the pan.

Stir to coat evenly.

Let it simmer 5–7 minutes until sauce thickens and chicken is cooked through.
