🌾 Mediterranean Healthy Oat Cookies
No Sugar • No Flour • Vegan • Dairy-Free
🧺 Ingredients:
2 cups rolled oats
1/4 cup unsweetened almond milk (or any plant milk)
2 ripe bananas (natural sweetener & binder)
1/4 cup raisins, chopped dates, or figs
1/4 cup chopped nuts (almonds, walnuts, or pistachios)
1 tbsp olive oil or coconut oil
1 tsp cinnamon
1/2 tsp vanilla extract (optional)
Pinch of sea salt
🍪 Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mash bananas in a large bowl until smooth.
Add wet ingredients — almond milk, olive oil, and vanilla extract. Mix well.
Stir in dry ingredients — oats, raisins (or other dried fruit), nuts, cinnamon, and salt. Combine until evenly mixed.
If the mixture feels too wet, add a few more oats.Scoop spoonfuls of the dough onto the baking sheet. Flatten slightly with a fork or your fingers.
Bake for 15–18 minutes, or until golden brown on the edges.
Cool completely before eating — they firm up as they cool.
🌿 Optional Mediterranean Add-ins:
1 tbsp tahini or almond butter for richness
1 tsp orange zest for a citrusy flavor
A few chopped dried apricots or figs for sweetness
Sprinkle sesame seeds on top before baking
