Ingredients

70 g dried apricots

50 g walnuts

70 g hazelnuts

60 g almonds

20 g pine nuts

30 g pumpkin seeds

40 g sunflower seeds

20 g sesame seeds

20 g flaxseeds

40 ml natural honey
-
1 egg white
-
A pinch of salt
Instructions

Preheat oven to 170°C (340°F). Line a baking tray with parchment paper.

Soften apricots: soak in warm water for 5 minutes, then drain well.

Chop nuts & seeds: pulse walnuts, hazelnuts, almonds, and pine nuts in a food processor until coarse (do not make flour).

Finely chop the dried apricots.

Transfer everything to a bowl. Add pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, and salt.

Add honey and egg white. Mix well until the mixture sticks together.

Shape cookies: form small balls or flatten slightly into cookie shapes.

Place on tray and bake for 15–18 minutes, until lightly golden.

Cool completely — they firm up as they cool.
