Healthy Nut & Seed Energy Cookies (Mediterranean Style)
Naturally sweet, protein-rich, full of fiber, and super easy!
🟡 INGREDIENTS (makes 12–14 cookies)
Dry Ingredients

1 cup rolled oats

¼ cup chopped almonds

¼ cup chopped walnuts
-
2 tbsp pistachios (optional but very Mediterranean)

2 tbsp sunflower seeds
-
2 tbsp pumpkin seeds
-
1 tbsp chia seeds
-
1 tbsp sesame seeds
-
½ tsp cinnamon
-
Pinch of salt
Wet Ingredients

2 medium ripe bananas, mashed
-
3 tbsp honey or date syrup
-
2 tbsp olive oil (mild/light flavor)
-
1 tsp vanilla extract
Optional Mix-Ins

¼ cup dried cranberries or raisins

2 tbsp dark chocolate chips
-
2 tbsp shredded coconut
🟢 DIRECTIONS
1. Prep

Preheat oven to 175°C (350°F).

Line a baking sheet with parchment paper.
2. Mix Dry Ingredients
In a bowl combine:

Oats
-
Nuts
-
Seeds
-
Cinnamon
-
Salt
Stir well.
3. Add Wet Ingredients
Add to the bowl:

Mashed bananas
-
Honey/date syrup
-
Olive oil
-
Vanilla
Mix until everything is evenly coated.
The mixture should be thick and sticky.
4. Shape the Cookies

Scoop spoonfuls of dough and flatten into cookie shapes.

These won’t spread, so shape them exactly how you want them.
5. Bake

Bake 14–16 minutes until lightly golden.

Let cool completely — they firm up as they cool.
