Honey Lime Chicken

1½ lb (700 g) boneless skinless chicken breasts or thighs

2 tbsp extra-virgin olive oil

Zest of 1 lime

3 tbsp fresh lime juice

2 tbsp honey (or date syrup)

2 cloves garlic, minced

1 tsp smoked paprika
-
1 tsp dried oregano
-
½ tsp ground cumin

Salt & black pepper to taste
Mediterranean Rice Layer

1½ cups cooked basmati or jasmine rice
-
1 tbsp olive oil
-
1 tbsp fresh lemon juice
-
2 tbsp chopped fresh parsley or cilantro
-
Salt to taste
Avocado Layer
-
2 ripe avocados, diced
-
1 tbsp lime juice
-
Pinch of salt
-
Optional: 1 tbsp Greek yogurt or tahini for creaminess
Fresh Toppings (Optional)

Cherry tomatoes, diced

Cucumber, finely chopped
-
Crumbled feta cheese

Chili flakes
🔪 Instructions

Marinate the chicken
In a bowl, whisk olive oil, lime zest, lime juice, honey, garlic, paprika, oregano, cumin, salt, and pepper.
Add chicken and marinate for 15–30 minutes. -
Cook the chicken
Heat a grill pan or skillet over medium heat.
Cook chicken 5–6 minutes per side until golden and cooked through.
Rest 5 minutes, then slice. -
Prepare the rice
In a bowl, toss warm rice with olive oil, lemon juice, parsley, and salt. -
Prepare the avocado
Gently mix avocado with lime juice, salt, and optional yogurt or tahini. -
Assemble the stacks
Use a ring mold or small bowl:-
Bottom layer: rice

Middle layer: sliced honey lime chicken

Top layer: avocado mixture

Finish & serve
Garnish with tomatoes, cucumber, feta, and chili flakes.
