🧄 Ingredients

Honey Lime Chicken

  • 1½ lb (700 g) boneless skinless chicken breasts or thighs

  • 2 tbsp extra-virgin olive oil

  • Zest of 1 lime

  • 3 tbsp fresh lime juice

  • 2 tbsp honey (or date syrup)

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tsp dried oregano

  • ½ tsp ground cumin

  • Salt & black pepper to taste

Mediterranean Rice Layer

  • 1½ cups cooked basmati or jasmine rice

  • 1 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 2 tbsp chopped fresh parsley or cilantro

  • Salt to taste

Avocado Layer

  • 2 ripe avocados, diced

  • 1 tbsp lime juice

  • Pinch of salt

  • Optional: 1 tbsp Greek yogurt or tahini for creaminess

Fresh Toppings (Optional)

  • Cherry tomatoes, diced

  • Cucumber, finely chopped

  • Crumbled feta cheese

  • Chili flakes


🔪 Instructions

  1. Marinate the chicken
    In a bowl, whisk olive oil, lime zest, lime juice, honey, garlic, paprika, oregano, cumin, salt, and pepper.
    Add chicken and marinate for 15–30 minutes.

  2. Cook the chicken
    Heat a grill pan or skillet over medium heat.
    Cook chicken 5–6 minutes per side until golden and cooked through.
    Rest 5 minutes, then slice.

  3. Prepare the rice
    In a bowl, toss warm rice with olive oil, lemon juice, parsley, and salt.

  4. Prepare the avocado
    Gently mix avocado with lime juice, salt, and optional yogurt or tahini.

  5. Assemble the stacks
    Use a ring mold or small bowl:

    • Bottom layer: rice

    • Middle layer: sliced honey lime chicken

    • Top layer: avocado mixture

  6. Finish & serve
    Garnish with tomatoes, cucumber, feta, and chili flakes.

  • Drizzle with olive oil + lime juice before serving
