2 tbsp fresh parsley, chopped
Mediterranean Creamy Dressing

⅓ cup plain Greek yogurt

1½ tbsp extra virgin olive oil

1½ tbsp fresh lemon juice
-
1 tbsp honey or date syrup
-
1 tsp Dijon mustard
-
½ tsp garlic powder
-
Salt & black pepper to taste
🔪 Instructions

Prep the broccoli
Finely chop broccoli florets into bite-sized pieces. For extra tenderness, blanch for 30 seconds and rinse with cold water (optional). -
Mix the salad
In a large bowl, combine broccoli, diced apple, red onion, nuts, dried fruit, feta, and parsley. -
Make the dressing
In a small bowl, whisk Greek yogurt, olive oil, lemon juice, honey, Dijon, garlic powder, salt, and pepper until smooth. -
Combine & chill
Pour dressing over salad and toss well.
Chill 15–20 minutes for best flavor. -
Serve
