🍎🥦 Mediterranean Honeycrisp Apple Broccoli Salad

🧄 Ingredients

Salad

  • 3 cups fresh broccoli florets (finely chopped)

  • 1 large Honeycrisp apple, diced (leave peel on)

  • ¼ cup red onion, finely diced

  • ⅓ cup toasted walnuts or almonds, chopped

  • ⅓ cup dried cranberries or raisins (optional)

  • ¼ cup crumbled feta cheese (optional but recommended)

  • 2 tbsp fresh parsley, chopped

Mediterranean Creamy Dressing

  • ⅓ cup plain Greek yogurt

  • 1½ tbsp extra virgin olive oil

  • 1½ tbsp fresh lemon juice

  • 1 tbsp honey or date syrup

  • 1 tsp Dijon mustard

  • ½ tsp garlic powder

  • Salt & black pepper to taste


🔪 Instructions

  1. Prep the broccoli
    Finely chop broccoli florets into bite-sized pieces. For extra tenderness, blanch for 30 seconds and rinse with cold water (optional).

  2. Mix the salad
    In a large bowl, combine broccoli, diced apple, red onion, nuts, dried fruit, feta, and parsley.

  3. Make the dressing
    In a small bowl, whisk Greek yogurt, olive oil, lemon juice, honey, Dijon, garlic powder, salt, and pepper until smooth.

  4. Combine & chill
    Pour dressing over salad and toss well.
    Chill 15–20 minutes for best flavor.

  5. Serve
    Taste and adjust seasoning before serving.
