Ingredients

Cream Cheese Mixture

  • 250 g (8 oz) cream cheese, softened
  • 50 g unsalted butter
  • 100 ml whole milk
  • 6 egg yolks
  • 60 g cake flour
  • 20 g cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest (optional)

Meringue

  • 6 egg whites
  • 120 g granulated sugar
  • ¼ teaspoon cream of tartar (or 1 teaspoon lemon juice)

Instructions

Step 1: Prepare the Pan

Preheat your oven to 320°F (160°C).

Line the bottom and sides of an 8-inch (20 cm) round cake pan with parchment paper. Wrap the outside of the pan with aluminum foil to prevent water from leaking in during baking.

Step 2: Make the Batter

In a heatproof bowl over simmering water, melt together the cream cheese, butter, and milk. Stir until smooth and creamy.

Remove from the heat and let cool slightly.

Whisk in the egg yolks one at a time.

Add the vanilla, lemon juice, and lemon zest.

Sift together the cake flour and cornstarch, then gently mix into the batter until smooth.

Step 3: Make the Meringue

In a clean bowl, beat the egg whites until foamy.

Step 4: Fold Together

Fold one-third of the meringue into the cream cheese mixture to lighten it.

Step 5: Bake

Pour the batter into the prepared cake pan.

Tap the pan gently to release any large air bubbles.

Place the cake pan into a larger roasting pan.

Fill the roasting pan with hot water until it reaches about halfway up the sides of the cake pan.

Bake for:

  • 20 minutes at 320°F (160°C)
  • Reduce the temperature to 285°F (140°C) and bake for another 60 minutes.

Turn off the oven and leave the cake inside with the door slightly open for 15 minutes.

Remove from the oven and cool completely.

Step 6: Finish

Dust generously with powdered sugar before serving.
