1 cup unsweetened shredded coconut

⅓ cup dark chocolate chips (70% or higher)

⅓ cup honey or maple syrup

¼ cup extra-virgin olive oil or melted coconut oil

1 large egg

1 tsp vanilla extract

½ tsp baking soda

Pinch sea salt

Optional topping: whole almonds or sliced almonds

Preheat oven to 175°C / 350°F. Line a baking tray with parchment paper.

Mix dry ingredients
In a bowl, combine almond flour, shredded coconut, baking soda, and salt. -
Mix wet ingredients
In another bowl, whisk egg, honey, olive oil, and vanilla until smooth. -
Combine
Add wet mixture to dry ingredients. Fold in dark chocolate chips. -
Shape cookies
Scoop tablespoon-sized dough onto tray. Gently flatten. Press an almond on top if desired. -
Bake for 12–15 minutes until edges are lightly golden.

Cool on tray for 10 minutes before moving—they firm up as they cool.

Melt 2 tbsp dark chocolate and drizzle over cooled cookies for a classic Almond Joy finish.
