Mediterranean Baked Fish (Lemon, Garlic & Herbs)
Ingredients (Serves 4)

4 fish fillets (cod, haddock, sea bass, snapper, or tilapia)

3 tbsp extra-virgin olive oil

4 cloves garlic, minced

Zest of 1 lemon
-
Juice of 1 lemon
-
1 tsp dried oregano
-
1 tsp dried thyme or Italian seasoning

Salt & freshly ground black pepper, to taste

½ cup cherry tomatoes, halved
-
¼ cup Kalamata olives, sliced
-
2 tbsp capers (optional)
-
2 tbsp fresh parsley or basil, chopped
Instructions

Preheat Oven
Preheat to 200°C (400°F). Lightly oil a baking dish. -
Prepare the Marinade
In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. -
Assemble the Dish
Place fish fillets in the baking dish.
Spoon the marinade evenly over the fish.
Scatter tomatoes, olives, and capers around and on top. -
Bake
Bake uncovered for 12–15 minutes, depending on thickness, until fish flakes easily with a fork. -
Finish & Serve
Sprinkle with fresh parsley or basil.
Drizzle with extra olive oil and a squeeze of lemon.
