Mediterranean Baked Fish (Lemon, Garlic & Herbs)

Ingredients (Serves 4)

  • 4 fish fillets (cod, haddock, sea bass, snapper, or tilapia)

  • 3 tbsp extra-virgin olive oil

  • 4 cloves garlic, minced

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1 tsp dried oregano

  • 1 tsp dried thyme or Italian seasoning

  • Salt & freshly ground black pepper, to taste

Mediterranean Toppings

  • ½ cup cherry tomatoes, halved

  • ¼ cup Kalamata olives, sliced

  • 2 tbsp capers (optional)

  • 2 tbsp fresh parsley or basil, chopped


Instructions

  1. Preheat Oven
    Preheat to 200°C (400°F). Lightly oil a baking dish.

  2. Prepare the Marinade
    In a small bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper.

  3. Assemble the Dish
    Place fish fillets in the baking dish.
    Spoon the marinade evenly over the fish.
    Scatter tomatoes, olives, and capers around and on top.

  4. Bake
    Bake uncovered for 12–15 minutes, depending on thickness, until fish flakes easily with a fork.

  5. Finish & Serve
    Sprinkle with fresh parsley or basil.
    Drizzle with extra olive oil and a squeeze of lemon.


Serving Suggestions

  • Serve with roasted vegetables, lemony rice, or herbed couscous

  • Add a Greek salad or garlic sautéed spinach on the side


Tips & Variations

  • Add a splash of white wine to the baking dish for extra depth

  • Top with crumbled feta for a Greek twist

  • Use parchment paper for an easy en papillote version
