Tender salmon fillets are baked with extra-virgin olive oil, garlic, sun-dried tomatoes, and herbs, then finished with creamy feta and fresh lemon. This dish is simple yet elegant—perfect for weeknights or special dinners.


🛒 Ingredients (Serves 4)

  • 4 salmon fillets (about 5–6 oz / 150–170 g each)

  • 3 tbsp extra-virgin olive oil

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • ¼ tsp paprika

  • Salt & freshly ground black pepper, to taste

  • Zest of 1 lemon

  • 2 tbsp fresh lemon juice

  • ½ cup crumbled feta cheese

  • 2 tbsp fresh parsley or basil, chopped


👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 400°F (200°C).

  • Lightly grease a baking dish or line with parchment paper.


2️⃣ Season the Salmon

  • Pat salmon dry and place in the baking dish.

  • Drizzle with olive oil.

  • Sprinkle with garlic, oregano, thyme, paprika, salt, and pepper.

  • Add lemon zest and sun-dried tomatoes evenly over the fillets.


3️⃣ Bake

  • Bake uncovered for 12–15 minutes, depending on thickness, until salmon flakes easily with a fork.


4️⃣ Add Feta & Finish

  • Remove from oven and sprinkle feta cheese over the salmon.

  • Return to oven for 2–3 minutes, just until feta softens.

  • Drizzle with fresh lemon juice and garnish with herbs.
