🍌 Mediterranean Banana Oat Muffins

2 ripe bananas, mashed

⅓ cup extra-virgin olive oil (or melted butter)

¼ cup honey or maple syrup

1 tsp vanilla extract

1½ cups rolled oats

½ cup whole-wheat flour (or oat flour)

1 tsp baking powder

½ tsp baking soda

½ tsp cinnamon

¼ tsp sea salt

Instructions

Preheat oven: 175°C (350°F). Line a muffin tin with paper liners or lightly grease.

Wet ingredients: In a bowl, whisk mashed bananas, eggs, olive oil, honey, and vanilla until smooth.

Dry ingredients: In another bowl, mix oats, flour, baking powder, baking soda, cinnamon, and salt.

Combine: Stir dry ingredients into wet until just combined. Fold in any add-ins.

Fill: Spoon batter evenly into muffin cups (about ¾ full).

Bake: 18–22 minutes, until golden and a toothpick comes out clean.

Cool: Let rest 5 minutes, then transfer to a rack.
