🥒 Mediterranean Cabbage & Cucumber Dinner Salad

Crunchy • Light • Low-Calorie • Detox-Friendly


Ingredients

Vegetables

  • 2 cups shredded cabbage (green or Napa)

  • 1 large cucumber, thinly sliced

  • 1 small carrot, julienned

  • ½ red bell pepper, thinly sliced

  • 2 green onions, chopped

  • 2 tbsp fresh dill or parsley


Mediterranean Dressing

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tbsp apple cider vinegar

  • 1–2 tsp Dijon mustard

  • 1 garlic clove, minced

  • ½ tsp dried oregano

  • Salt and black pepper to taste


Optional Add-Ins (Mediterranean Style)

  • 1 tbsp sesame seeds

  • 2 tbsp chickpeas

  • A few olives

  • Feta crumbles (small amount)


🥗 Instructions

1. Prepare Vegetables

  1. Shred the cabbage.

  2. Slice cucumbers thinly (half-moons or long ribbons).

  3. Cut bell pepper and carrot into thin strips.

  4. Add all veggies to a large salad bowl.


2. Make the Dressing

In a small bowl, whisk together:

  • olive oil

  • lemon juice

  • apple cider vinegar

  • Dijon mustard

  • garlic

  • oregano

  • salt & pepper

Whisk until creamy.


3. Combine

  • Pour dressing over vegetables.

  • Toss very well for 1–2 minutes so cabbage softens slightly.

  • Add herbs (dill or parsley).


4. Serve

Serve immediately for maximum crunch, or chill for 20 minutes — it gets even better!
