⭐ Ingredients
For the Fritters
2 medium apples, peeled & diced (Honeycrisp, Gala, or Granny Smith)
1 tbsp lemon juice
1 tbsp olive oil (Mediterranean twist)
1 egg
⅓ cup Greek yogurt
¼ cup honey or maple syrup
1 tsp vanilla extract
1 cup whole-wheat flour or oat flour
1 tsp baking powder
½ tsp cinnamon
¼ tsp nutmeg
Pinch of salt
For the Honey Glaze (Mediterranean Style)
2 tbsp honey
1 tbsp warm water
Optional: a pinch of cinnamon or lemon zest
🥣 Instructions
1. Prepare the Apples
Preheat oven to 375°F (190°C).
Toss diced apples with lemon juice to prevent browning.
Optional: sauté apples for 2 minutes in a teaspoon of olive oil to soften (extra flavor!).
2. Make the Batter
In a bowl, whisk together:
egg
Greek yogurt
honey
olive oil
vanilla
In another bowl, combine:
flour
baking powder
cinnamon
nutmeg
pinch of salt
Add dry ingredients to wet and mix gently.
Fold in the apples.
3. Shape the Fritters
Line a baking sheet with parchment paper.
Scoop small mounds of batter (¼ cup each) and lightly flatten with a spoon.
4. Bake
Bake 12–15 minutes, until golden and puffed.
Broil the tops for 1–2 minutes for that classic fritter look.

Mix honey + warm water.
Brush over warm fritters immediately.
