🥗 Mediterranean Celery Olive Salad

Crisp • Refreshing • 10-Minute Salad


Ingredients

Base Salad

  • 4–5 celery stalks, thinly sliced

  • ½ cup green olives, sliced (Castelvetrano or your favorite)

  • ¼ cup black olives, sliced (optional mix for color)

  • 1 small red onion, thinly sliced

  • ½ cup cherry tomatoes, halved (optional but delicious)

  • ¼ cup fresh parsley, chopped

  • 1–2 tbsp fresh dill or mint (optional)

Dressing

  • 3 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • 1 tbsp red wine vinegar

  • 1 tsp Dijon mustard

  • 1 small garlic clove, grated

  • ½ tsp dried oregano

  • Salt & pepper to taste

  • Optional: pinch of chili flakes

Optional Add-Ins

  • Feta cubes or crumbles

  • Capers

  • Toasted almonds or walnuts

  • Sliced cucumber

  • Chickpeas for protein


Instructions

1. Prepare the vegetables

Slice celery into thin crescents for extra crunch.
Add to a bowl with:

  • green olives

  • black olives

  • red onion

  • parsley

  • optional tomatoes, dill/mint


2. Make the dressing

Whisk together:

  • olive oil

  • lemon juice

  • red wine vinegar

  • Dijon

  • garlic

  • oregano

  • salt & pepper

  • chili flakes (optional)


3. Combine

Pour dressing over the salad.
Toss until everything is glossy and coated.


4. Finish

Taste and adjust seasoning with:

  • more lemon

  • more olives

  • pinch of salt or pepper

Add feta or nuts if desired.

  • Grilled chicken, fish, or shrimp

  • Mediterranean mezze platter

  • Couscous or quinoa bowls

  • Pita, hummus, or roasted veggies
