🧀✨ Mediterranean Cheesy Garlic Flatbread (Tray-Baked)

Soft • Cheesy • Herb-infused • No yeast needed


Ingredients

For the Dough

  • 2 cups all-purpose flour

  • 1 cup plain Greek yogurt

  • 2 tbsp olive oil

  • 1 tsp baking powder

  • ½ tsp salt

For the Topping

  • 1–1½ cups shredded mozzarella or a mix of:

    • mozzarella

    • feta (optional, for Mediterranean flavor)

  • 2 tbsp olive oil

  • 3–4 garlic cloves, minced

  • ½ tsp dried oregano

  • ½ tsp dried thyme or basil

  • ¼ tsp black pepper

  • Pinch of chili flakes (optional)

For Garnish

  • Extra oregano or parsley

  • Extra olive oil drizzle


👩‍🍳 Instructions

1. Prepare the Dough

  1. In a bowl, combine flour, baking powder, and salt.

  2. Add Greek yogurt and olive oil.

  3. Mix until a soft dough forms.

  4. Knead for 2–3 minutes until smooth.

  5. Let it rest for 10 minutes (optional but helps softness).


2. Shape & Pre-Bake

  1. Preheat oven to 200°C (400°F).

  2. Lightly oil a baking tray.

  3. Press the dough evenly into a rectangle about ½ inch thick.

  4. Pre-bake for 8 minutes.


3. Add the Garlic Cheese Topping

  1. In a bowl, mix:

    • olive oil

    • minced garlic

    • oregano

    • thyme/basil

    • pepper

  2. Brush this mixture generously over the pre-baked dough.

  3. Sprinkle the cheese evenly all over the top.


4. Bake

  • Return to the oven and bake 10–12 minutes or until:

    • cheese is melted

    • edges are golden

    • top is slightly crisp


5. Slice & Serve

  1. Let rest for 2 minutes.

  2. Cut into squares like in your image.

  3. Garnish with extra herbs or olive oil.
