Mediterranean Coconut Cake (No Flour • No Sugar)

Gluten-free • Sugar-free • Healthy • Microwave or Oven


Ingredients

(Makes 1 small cake or 2 servings)

  • 2 large eggs

  • 3 tbsp coconut oil (melted) or olive oil

  • 3 tbsp milk (or coconut/almond milk)

  • 3 tbsp honey or 2 tbsp date syrup (Mediterranean natural sweetener)

  • ½ cup finely shredded coconut (unsweetened)

  • ½ tsp baking powder

  • ½ tsp vanilla extract

  • Pinch of salt

  • Optional add-ins:

    • 1 tbsp chopped nuts (walnuts, pistachios, almonds)

    • 1 tbsp raisins or chopped dates

    • Pinch cinnamon or cardamom


Instructions — 5-Minute Microwave Method

  1. In a bowl, whisk eggs until smooth.

  2. Add coconut oil, milk, honey/date syrup, vanilla → mix well.

  3. Add shredded coconut, baking powder, and salt.

  4. Stir until a thick batter forms.

  5. Pour into a microwave-safe mug or small bowl.

  6. Microwave 2–3 minutes until set and risen.

  7. Let cool 2 minutes, then flip out or eat straight from the mug.


Instructions — Oven Method (Still Quick!)

  1. Preheat oven to 180°C (350°F).

  2. Pour batter into a small greased baking dish or ramekin.

  3. Bake 12–15 minutes, until golden.


Topping Ideas (Mediterranean Style)

  • Drizzle honey or date syrup

  • Sprinkle extra coconut

  • Add chopped pistachios or walnuts

  • Top with Greek yogurt

  • Add fresh berries or pomegranate seeds


Tips

  • For a sweeter cake, add 1 more tbsp honey or 1 tbsp crushed dates.

  • For a richer texture, replace 1 tbsp milk with yogurt.

  • For chocolate lovers → add 1 tbsp cocoa powder (still flour-free).
