🍪 Mediterranean Cranberry Pistachio Shortbread Cookies

🧺 Ingredients

  • 1 cup (225 g) unsalted butter, softened

  • ½ cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • ¼ teaspoon salt

  • ¾ cup dried cranberries, chopped

  • ½ cup pistachios, shelled & chopped

Optional Mediterranean Touch

  • Zest of ½ orange or lemon

  • 1 tablespoon rose water or orange blossom water (optional)


👩‍🍳 Instructions

  1. Cream butter and sugar until smooth and pale.

  2. Mix in vanilla and citrus zest (if using).

  3. Add flour and salt; mix just until combined.

  4. Fold in cranberries and pistachios.

  5. Shape dough into a log, wrap, and chill 30–45 minutes.

  6. Preheat oven to 170°C / 340°F.

  7. Slice into ½-inch rounds and place on parchment-lined baking sheet.

  8. Bake 12–15 minutes, just until edges are lightly golden.

  9. Cool completely before serving.


🌿 Mediterranean Tips

  • Drizzle with dark chocolate once cooled

  • Dust lightly with powdered sugar

  • Add a pinch of cardamom for warmth
