🥗 Mediterranean Creamy Cucumber Cabbage Salad

Ingredients

Salad

  • 2 cups green cabbage, finely shredded

  • 1 large cucumber, thinly sliced

  • 1 medium carrot, julienned or grated

  • 2 green onions, finely sliced

  • ½ red bell pepper, thinly sliced (optional)

Creamy Mediterranean Dressing

  • ½ cup Greek yogurt

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon fresh lemon juice or apple cider vinegar

  • 1 teaspoon Dijon mustard (optional)

  • 1 small garlic clove, grated

  • Sea salt & freshly ground black pepper, to taste

Optional Add-Ins

  • Fresh dill or parsley, chopped

  • Feta cheese crumbles

  • Olives, sliced


Instructions

  1. Prep Vegetables
    Shred cabbage finely. Slice cucumber thin (use a mandoline if possible).
    Combine cabbage, cucumber, carrot, green onions, and bell pepper in a large bowl.

  2. Make the Dressing
    In a small bowl, whisk Greek yogurt, olive oil, lemon juice, Dijon, garlic, salt, and pepper until smooth.

  3. Toss the Salad
    Pour dressing over vegetables and toss until evenly coated.

  4. Rest for Flavor
    Let sit 5–10 minutes to slightly soften the cabbage and blend flavors.

  5. Serve
    Finish with fresh herbs or feta if using. Serve chilled or at room temperature.
