🥣 Mediterranean Detox Vegetable Soup
Ingredients
Vegetables:
1 cup broccoli florets
1 cup chopped cabbage
1 large carrot, diced
1 cup zucchini slices or cubes
1 bell pepper (any color), chopped
1 medium onion, chopped
2–3 garlic cloves, minced
1–2 stalks celery, chopped
1 medium tomato, chopped (or ½ cup canned diced tomatoes)
Broth & Seasoning:
5 cups vegetable broth (or chicken broth)
2 tbsp olive oil
½ tsp turmeric
½ tsp smoked paprika
½ tsp crushed red pepper flakes (optional)
½ tsp dried oregano
½ tsp dried basil
Salt and black pepper to taste
2 tbsp chopped fresh parsley
1 tbsp lemon juice (optional, for freshness)
🥘 Instructions
1. Sauté the aromatics
Heat olive oil in a pot.
Add onion, garlic, and celery.
Cook 2–3 minutes until fragrant.
2. Add the hard vegetables
Add the:
carrots
bell pepper
zucchini
Cook for another 3–4 minutes.
3. Add seasoning
Stir in:
turmeric
smoked paprika
oregano
basil
salt and pepper
Mix well so spices coat the vegetables.
4. Add broth & the rest of the veggies
Pour in vegetable broth.
Add broccoli, cabbage, and tomatoes.
Bring to a boil, then reduce heat.
5. Simmer
Let the soup simmer 12–15 minutes, until all vegetables are tender but not mushy.
6. Finish with freshness
Stir in fresh parsley.
Add lemon juice right before serving.
🍽 Serving Suggestions
Serve with whole-grain bread or pita.
Add cooked chickpeas for extra protein.
Drizzle a little extra-virgin olive oil on top for a richer Mediterranean flavor.
