Base

1 cup rolled oats

2 medium apples, grated or finely chopped

1 egg (or 2 tbsp ground flax + 4 tbsp water for vegan)

1 cup milk of choice (or almond milk)

1 tbsp olive oil (Mediterranean twist)

Β½ tsp cinnamon

Pinch of salt
-
Β½ tsp vanilla extract (optional)
Optional Mediterranean add-ins

1β2 tbsp raisins or chopped dates (natural sweetness)

1 tbsp chopped walnuts or almonds

A pinch of nutmeg or cardamom

Zest of Β½ lemon (amazing flavor)

1. Prep
Preheat oven to 180Β°C / 350Β°F.
Grease a small baking dish with olive oil.
2. Mix the batter
In a bowl combine:

Oats

Grated apples
-
Egg (or flax egg)
-
Milk
-
Olive oil
-
Cinnamon
-
Salt
-
Vanilla
Mix until everything is evenly combined.
If you want it sweeter naturally, add raisins or dates now.
3. Bake
Pour the mixture into the baking dish.
Spread evenly.
Bake 25β30 minutes, or until golden and set.
For a firmer βbarβ texture, bake 35 minutes.
