For the Dough

2 cups all-purpose flour

1 cup Greek yogurt (plain, thick)

1 tsp salt

1 tsp baking powder

2 tbsp olive oil
For Cooking

2β3 tbsp olive oil OR butter

Optional: 1β2 tbsp ghee (for rich Mediterranean flavor)

1 tsp oregano

Fresh herbs (parsley, thyme)

Brush with olive oil + lemon + garlic after cooking

1. Make the dough
In a bowl, combine:

Baking powder

Salt
Stir.
Add Greek yogurt + olive oil.
Mix with a spoon, then knead by hand for 2β3 minutes until a soft dough forms.
If sticky β add 1β2 tbsp flour
If dry β add 1 tbsp yogurt
2. Rest
Cover and let rest for 10 minutes (helps gluten relax = soft breads).
3. Shape
Divide dough into 8β10 balls.
Roll each one into a thin circle (tortilla-thin or naan-thin, your choice).
4. Cook
Heat a skillet over medium-high heat.
Brush with a little butter or olive oil.
Cook each flatbread:
