🛒 Ingredients (Serves 6)

For the Meatloaf

  • 1 lb (450 g) ground chicken

  • ¾ cup breadcrumbs (or almond flour for low-carb)

  • ½ cup grated Parmesan cheese

  • 1 egg

  • ½ cup milk (or almond milk)

  • 1 small onion, finely chopped

  • 4 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp paprika

  • ½ tsp black pepper

  • ¾ tsp salt

  • 2 tbsp fresh parsley, chopped

Garlic Parmesan Topping

  • ¼ cup grated Parmesan

  • 2 tbsp melted butter or olive oil

  • 1 tsp garlic powder

  • 1 tbsp fresh parsley


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat oven to 180°C (350°F). Lightly grease a loaf pan or line with parchment.

  2. Mix the Meatloaf
    In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, milk, onion, garlic, olive oil, oregano, basil, paprika, salt, pepper, and parsley.
    Mix gently until just combined (don’t overmix).

  3. Shape & Top
    Transfer mixture into loaf pan and gently press into shape.
    Mix topping ingredients and spread evenly over the meatloaf.

  4. Bake
    Bake uncovered for 40–45 minutes, until internal temperature reaches 74°C / 165°F.

  5. Rest & Serve
    Let rest for 5–10 minutes before slicing for maximum juiciness.
