1 egg

1 small onion, finely chopped

4 cloves garlic, minced

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

½ tsp paprika

½ tsp black pepper

¾ tsp salt

2 tbsp fresh parsley, chopped
Garlic Parmesan Topping

¼ cup grated Parmesan
-
2 tbsp melted butter or olive oil

1 tsp garlic powder

1 tbsp fresh parsley
👩🍳 Instructions

Preheat Oven
Preheat oven to 180°C (350°F). Lightly grease a loaf pan or line with parchment. -
Mix the Meatloaf
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, milk, onion, garlic, olive oil, oregano, basil, paprika, salt, pepper, and parsley.
Mix gently until just combined (don’t overmix). -
Shape & Top
Transfer mixture into loaf pan and gently press into shape.
Mix topping ingredients and spread evenly over the meatloaf. -
Bake
Bake uncovered for 40–45 minutes, until internal temperature reaches 74°C / 165°F. -
Rest & Serve
Let rest for 5–10 minutes before slicing for maximum juiciness.
