Juicy chicken is roasted with tender potatoes and crisp green beans in a fragrant garlic-herb olive oil marinade. This classic Mediterranean-inspired one-pan meal is perfect for busy weeknights or relaxed family dinners.


🛒 Ingredients (Serves 4)

  • 4 bone-in, skin-on chicken thighs or drumsticks

  • 1½ lb (700 g) baby potatoes, halved

  • 12 oz (340 g) green beans, trimmed

  • 4 tbsp extra-virgin olive oil

Garlic Herb Marinade

  • 5 cloves garlic, minced

  • Juice of 1 lemon

  • Zest of ½ lemon

  • 1 tsp dried oregano

  • 1 tsp dried thyme or rosemary

  • ½ tsp paprika

  • Salt & freshly ground black pepper, to taste

Optional Add-Ins

  • Cherry tomatoes

  • Kalamata olives

  • Fresh rosemary sprigs


👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 400°F (200°C).

  • Line a large sheet pan with parchment paper.


2️⃣ Prepare the Marinade

In a small bowl, whisk olive oil, garlic, lemon juice, zest, oregano, thyme, paprika, salt, and pepper.


3️⃣ Assemble the Pan

  • Place chicken and potatoes on the sheet pan.

  • Drizzle with ⅔ of the marinade and toss to coat evenly.

  • Spread in a single layer.


4️⃣ Roast

  • Roast for 30 minutes.


5️⃣ Add Green Beans

  • Remove pan from oven.

  • Add green beans and any optional add-ins.

  • Drizzle with remaining marinade and toss gently.

  • Return to oven and roast 15–20 minutes until chicken is golden and potatoes are tender.


6️⃣ Finish & Serve

  • Let rest 5 minutes.

  • Garnish with fresh herbs and a squeeze of lemon.
