🧺 Ingredients

2 cups cooked rice (preferably day-old; basmati or jasmine)

250 g (½ lb) beef sirloin or flank steak, thinly sliced

1 large onion, thinly sliced

3 tablespoons extra virgin olive oil

3 cloves garlic, minced
-
1 teaspoon paprika
-
½ teaspoon ground cumin
-
½ teaspoon ground black pepper

½ teaspoon dried oregano or thyme

Salt, to taste

2 eggs, lightly beaten

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

Optional: chili flakes for heat
👩🍳 Instructions

Season the beef:
Toss sliced beef with paprika, cumin, black pepper, oregano, and a pinch of salt. -
Cook the onions:
Heat 2 tablespoons olive oil in a large pan or wok over medium heat.
Add onions and sauté until soft and golden (6–8 minutes). Remove and set aside. -
Cook the beef:
In the same pan, add remaining olive oil.
Sear the beef on high heat for 2–3 minutes until just cooked. Remove and set aside. -
Scramble the eggs:
Lower heat to medium. Add garlic and sauté for 30 seconds.
Push to the side, add eggs, and scramble lightly. -
Fry the rice:
Add cooked rice, breaking up clumps. Stir-fry for 3–4 minutes until heated through and lightly crisped. -
Combine:
Return onions and beef to the pan. Toss everything together well. -
Finish:
Add lemon juice, parsley, and chili flakes if using. Adjust salt to taste.
