🥗 Mediterranean Oven-Baked Cabbage Burgers
⭐ Overview
A light but satisfying dish where seasoned cabbage patties are baked until tender and crisp on the edges, then served with a bright Mediterranean tomato-herb topping or inside pita as a veggie “burger.”
🧾 Ingredients (4–6 patties)
For the cabbage patties

1 small green cabbage (about 700–800 g), shredded finely

1 medium onion, diced
-
2 cloves garlic, minced
-
2 eggs
-
¾ cup breadcrumbs (or almond flour for low-carb)
-
½ cup crumbled feta cheese
-
2 tbsp olive oil
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp paprika
-
½ tsp cumin
-
½ tsp dried oregano
-
Optional: pinch of chili flakes
Mediterranean topping / serving

1 large tomato, diced
-
½ cucumber, diced
-
¼ cup parsley or mint, chopped
-
2 tbsp olive oil
-
1 tbsp lemon juice
-
Salt & pepper to taste

Optional: Greek yogurt or tzatziki

Optional: pita or burger buns
🍳 Instructions
1. Prep the cabbage

Preheat oven to 400°F (200°C).

Shred cabbage finely.
-
Optional: blanch cabbage in boiling water for 3 minutes, then drain and squeeze out excess moisture. This helps the patties bind better.
2. Mix the patties

In a large bowl combine: cabbage, onion, garlic, eggs, breadcrumbs, feta, olive oil, and all spices.

Mix until the mixture holds together.

If too wet → add more breadcrumbs

If too dry → add a splash of olive oil

3. Shape and bake
-
Line a baking tray with parchment.

Form 4–6 patties and place them on the tray.

Brush tops lightly with olive oil.

Bake 25–30 minutes, flipping halfway, until golden and slightly crisp.
🌿 Mediterranean salad topping

Combine tomato, cucumber, herbs, olive oil, lemon juice, salt & pepper.

Chill until serving.
🍽️ To Serve

Top each cabbage patty with a spoonful of the Mediterranean salad.

Add yogurt or tzatziki on the side.

Serve on its own, or tuck into warm pita for a Mediterranean veggie burger.
