  • 1 large egg

🧑‍🍳 Instructions

  1. Preheat & Prep

    • Preheat oven to 350°F (175°C).

    • Line a baking sheet with parchment paper.

  2. Mix Wet Ingredients

    • Add Greek yogurt, olive oil, sweetener, egg, and vanilla. Mix until creamy and well combined.

  4. Fold in Pecans & Zest

    • Scoop dough (about 1½ tbsp per cookie) onto the baking sheet.

    • Flatten slightly with your fingers or the back of a spoon — they won’t spread much.

    • Bake 10–12 minutes, until edges are golden brown.

  6. Cool

    • Let cool completely on the sheet before moving — they firm up as they cool.
