  • 2 chicken breasts (halved into 4 thin cutlets)
  • Salt & black pepper (to taste)
  • 1 cup breadcrumbs (preferably Italian-seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 eggs (beaten)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2–3 tbsp olive oil

  • 1/2 tsp dried oregano or Italian seasoning
  • Fresh basil or parsley (for garnish, optional)

  1. Prep the chicken
    Pat chicken dry and season both sides with salt and pepper.
  2. Set up breading station
    • Bowl 1: flour
    • Bowl 2: beaten eggs
    • Bowl 3: breadcrumbs + Parmesan + garlic powder + oregano
  3. Bread the cutlets
    Dredge each piece in flour → dip in egg → coat with breadcrumb mixture.
  4. Pan-fry
    Heat olive oil in a large pan over medium heat.
    Cook chicken for 3–4 minutes per side until golden and crispy.
  5. Add sauce & cheese
    Spoon marinara over each piece and top with mozzarella.
  6. Melt the cheese
    Cover the pan and cook for 3–5 minutes, OR transfer to oven (180°C / 350°F) for 5–7 minutes until cheese melts and bubbles.
