🥧 Ricotta Spinach Quiche (Mediterranean Style)

INGREDIENTS

Crust (choose one)

Option 1: Classic crust

  • 1 ½ cups all-purpose flour

  • ½ tsp salt

  • 8 tbsp cold butter, cubed

  • 4–5 tbsp cold water

OR
Option 2: No-crust Mediterranean style (lighter)

  • Skip the crust — pour filling directly into greased dish.


Filling

  • 1 cup ricotta cheese

  • 1 ½ cups fresh spinach, chopped (or ¾ cup cooked & drained)

  • 3 large eggs

  • ½ cup milk or cream

  • ½ cup feta cheese (optional but VERY Mediterranean)

  • ½ cup shredded mozzarella or parmesan

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • ½ small onion, finely chopped

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp oregano

  • ½ tsp dried basil or thyme

  • Pinch of nutmeg (optional but excellent)


🧀 INSTRUCTIONS

1. Make the Crust (if using)

  1. Mix flour and salt.

  2. Cut in butter until crumbly.

  3. Add cold water until dough forms.

  4. Roll out and press into pie dish.

  5. Pre-bake at 190°C (375°F) for 10 minutes.


2. Cook the Spinach Mixture

  1. Heat olive oil in a pan.

  2. Sauté onion 2–3 minutes.

  3. Add garlic, cook 30 seconds.

  4. Add spinach and cook until wilted.

  5. Cool slightly.


3. Make the Ricotta Filling

In a bowl, whisk:

  • Eggs

  • Milk/cream

  • Ricotta

  • Salt, pepper, herbs

  • Mozzarella

  • Feta (optional)

Stir in the cooked spinach mixture.


4. Fill & Bake

  • Pour filling into crust (or into greased pan if crustless).

  • Bake at 180°C (350°F) for 35–45 minutes,
    until set and lightly golden on top.

Let cool 10 minutes before slicing.
