🥧 Ricotta Spinach Quiche (Mediterranean Style)
⭐ INGREDIENTS
Crust (choose one)
Option 1: Classic crust
1 ½ cups all-purpose flour
½ tsp salt
8 tbsp cold butter, cubed
4–5 tbsp cold water
OR
Option 2: No-crust Mediterranean style (lighter)
Skip the crust — pour filling directly into greased dish.
Filling
1 cup ricotta cheese
1 ½ cups fresh spinach, chopped (or ¾ cup cooked & drained)
3 large eggs
½ cup milk or cream
½ cup feta cheese (optional but VERY Mediterranean)
½ cup shredded mozzarella or parmesan
2 tbsp olive oil
2 cloves garlic, minced
½ small onion, finely chopped
½ tsp salt
½ tsp black pepper
½ tsp oregano
½ tsp dried basil or thyme
Pinch of nutmeg (optional but excellent)
🧀 INSTRUCTIONS
1. Make the Crust (if using)
Mix flour and salt.
Cut in butter until crumbly.
Add cold water until dough forms.
Roll out and press into pie dish.
Pre-bake at 190°C (375°F) for 10 minutes.
2. Cook the Spinach Mixture
Heat olive oil in a pan.
Sauté onion 2–3 minutes.
Add garlic, cook 30 seconds.
Add spinach and cook until wilted.
Cool slightly.
3. Make the Ricotta Filling
In a bowl, whisk:
Eggs
Milk/cream
Ricotta
Salt, pepper, herbs
Mozzarella
Feta (optional)
Stir in the cooked spinach mixture.
4. Fill & Bake
Pour filling into crust (or into greased pan if crustless).
Bake at 180°C (350°F) for 35–45 minutes,
until set and lightly golden on top.
Let cool 10 minutes before slicing.
