Mediterranean Ritz Cracker Party Sandwiches

OPTION 1 — Lemon Herb Cream Cheese Filling

1 cup cream cheese (softened)

2 tbsp Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 tbsp chopped dill or parsley

¾ cup feta cheese, crumbled

1 can tuna (drained)

2 tbsp olive oil mayonnaise or Greek yogurt

1 tbsp finely chopped olives

1 tbsp finely chopped parsley

½ tbsp lemon juice

Black pepper to taste
OPTION 4 — Hummus Cucumber Sandwich Bites (lightest option)

½ cup hummus (classic, lemon, or garlic)

⅓ cup finely diced cucumbers

Sprinkle paprika or za’atar

🟢 DIRECTIONS
1. Prepare the Filling
Choose one of the fillings above and mix thoroughly in a bowl.
Make sure the mixture is spreadable but thick, not runny.
2. Assemble the Sandwiches

Place a teaspoon of filling on one Ritz cracker.

Top with another cracker to make a mini sandwich.

Press gently so filling spreads to the edges (but doesn’t ooze out).
3. Chill

Refrigerate for 20–30 minutes to firm up.
This makes the filling set and gives the crackers perfect texture.
