🛒 Ingredients

🍠 Sweet Potatoes

  • 4 medium sweet potatoes

  • 1 tbsp olive oil

  • Sea salt & black pepper


🥬 Spinach–Ricotta Filling

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups fresh spinach

  • 1 cup ricotta cheese (full-fat or part-skim)

  • ¼ cup grated Parmesan

  • ½ tsp dried oregano

  • ¼ tsp nutmeg (optional)

  • Salt & black pepper, to taste


🌿 Mediterranean Herb Drizzle

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tbsp fresh parsley, finely chopped

  • 1 tsp fresh dill or basil, chopped

  • 1 small garlic clove, grated

  • Pinch sea salt


👩‍🍳 Instructions

1️⃣ Bake the Sweet Potatoes

  1. Preheat oven to 200°C / 400°F.

  2. Scrub sweet potatoes, prick with a fork, rub lightly with olive oil, and season with salt & pepper.

  3. Bake 45–50 minutes until very tender.


2️⃣ Prepare the Filling

  1. Heat olive oil in a skillet over medium heat.

  2. Sauté onion until soft. Add garlic and cook 30 seconds.

  3. Add spinach and cook until wilted; remove from heat.

  4. Stir in ricotta, Parmesan, oregano, nutmeg (if using), salt, and pepper.


3️⃣ Stuff & Warm

  1. Slice sweet potatoes open lengthwise and gently fluff the inside with a fork.

  2. Spoon spinach–ricotta mixture generously into each potato.

  3. Return to oven for 8–10 minutes until heated through.


4️⃣ Make the Herb Drizzle

Whisk olive oil, lemon juice, parsley, dill (or basil), garlic, and salt.


5️⃣ Serve

Drizzle herb sauce over stuffed sweet potatoes and serve warm.
