🍗 Ingredients (4 servings)
For the Chicken & Rice
2 tbsp olive oil
1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
Salt & black pepper, to taste
1 small onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, sliced
1 cup fresh pineapple chunks
1 cup long-grain rice (basmati or jasmine)
2 cups low-sodium chicken broth
1 cup zucchini, diced (optional but very Mediterranean)
1 tsp paprika
½ tsp turmeric (optional for color)
½ tsp chili flakes (optional)
For the Ginger Soy Glaze
(Mediterranean-adapted — light and low sugar)
3 tbsp low-sodium soy sauce
1 tbsp olive oil

🍳 Instructions
1. Sear the Chicken
Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt and pepper.
Add chicken to the pan and cook 4–5 minutes until lightly browned but not fully cooked.
Remove and set aside.
2. Sauté the Aromatics & Vegetables
In the same pan add onion and bell pepper.
Cook 3–4 minutes until softened.
Add garlic, zucchini, and pineapple chunks.
Sauté for another 2–3 minutes until pineapple begins to caramelize slightly.
3. Add Rice & Spices
Stir in the rice, paprika, turmeric, and chili flakes.
Toast the rice for 1 minute with the vegetables.
4. Add Broth and Simmer
Pour in chicken broth.
Return the chicken to the pan.
Bring to a gentle boil, then reduce heat to low.
Cover and cook 15–18 minutes until rice is tender and liquid absorbed.
Fluff gently with a fork.
5. Make the Ginger Soy Glaze
In a small bowl whisk together soy sauce, olive oil, honey, vinegar/lemon, ginger, garlic powder, and cornstarch slurry.

Pour the glaze over the cooked chicken-rice mixture.
