Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • 1 cup shredded lettuce
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup cilantro (chopped)
  • 1 avocado (diced)
  • 1 lime (cut into wedges)
  • Salt and pepper to taste
  • 1/4 cup sour cream (optional)
  • 1/4 cup shredded cheese (optional)

Instructions:

  1. Prepare the Shrimp:
    • In a bowl, toss the shrimp with olive oil and taco seasoning until well coated.
    • Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
  2. Prepare the Lettuce Boats:
    • Carefully separate the lettuce leaves and use them as “boats” for the filling.
  3. Assemble the Boats:
    • Place a few shrimp in each lettuce leaf.
    • Top with shredded lettuce, cherry tomatoes, red onion, cilantro, and avocado.
    • If desired, add a dollop of sour cream and a sprinkle of shredded cheese.
  4. Serve:
    • Squeeze lime wedges over the boats for added flavor.
    • Serve immediately and enjoy!
