🥒 Mediterranean Tzatziki Chicken Salad

🧄 Ingredients
Chicken

1½ lb (700 g) boneless skinless chicken breasts or thighs

2 tbsp extra-virgin olive oil

1 tsp dried oregano

½ tsp paprika

Salt & black pepper to taste

Juice of ½ lemon
Homemade Tzatziki Dressing

1 cup plain Greek yogurt (thick, unsweetened)
-
1 medium cucumber, grated & squeezed dry
-
2 cloves garlic, finely minced
-
1½ tbsp fresh lemon juice
-
1 tbsp extra-virgin olive oil
-
1 tbsp fresh dill or mint, chopped
-
Salt to taste
Salad Add-Ins

½ cup cherry tomatoes, halved
-
¼ cup red onion, thinly sliced
-
¼ cup kalamata olives, sliced
-
2 tbsp fresh parsley or dill
-
Optional: crumbled feta cheese
🔪 Instructions

Cook the chicken
Season chicken with olive oil, oregano, paprika, salt, pepper, and lemon juice.
Grill or pan-sear over medium heat 6–7 minutes per side until golden and cooked through.
Rest 5 minutes, then slice or shred. -
Make the tzatziki
In a bowl, combine yogurt, grated cucumber, garlic, lemon juice, olive oil, herbs, and salt. Mix until smooth and creamy. -
Assemble the salad
In a large bowl, combine chicken, tomatoes, onion, olives, and herbs. -
Dress & toss
Add tzatziki and gently toss until evenly coated. -
Serve
Taste and adjust seasoning.
