🥒 Mediterranean Tzatziki Chicken Salad

🧄 Ingredients

Chicken

  • 1½ lb (700 g) boneless skinless chicken breasts or thighs

  • 2 tbsp extra-virgin olive oil

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Salt & black pepper to taste

  • Juice of ½ lemon

Homemade Tzatziki Dressing

  • 1 cup plain Greek yogurt (thick, unsweetened)

  • 1 medium cucumber, grated & squeezed dry

  • 2 cloves garlic, finely minced

  • 1½ tbsp fresh lemon juice

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp fresh dill or mint, chopped

  • Salt to taste

Salad Add-Ins

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, thinly sliced

  • ¼ cup kalamata olives, sliced

  • 2 tbsp fresh parsley or dill

  • Optional: crumbled feta cheese


🔪 Instructions

  1. Cook the chicken
    Season chicken with olive oil, oregano, paprika, salt, pepper, and lemon juice.
    Grill or pan-sear over medium heat 6–7 minutes per side until golden and cooked through.
    Rest 5 minutes, then slice or shred.

  2. Make the tzatziki
    In a bowl, combine yogurt, grated cucumber, garlic, lemon juice, olive oil, herbs, and salt. Mix until smooth and creamy.

  3. Assemble the salad
    In a large bowl, combine chicken, tomatoes, onion, olives, and herbs.

  4. Dress & toss
    Add tzatziki and gently toss until evenly coated.

  5. Serve
    Taste and adjust seasoning.
