Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Make the cinnamon swirl: In a small bowl, combine 2 tablespoons brown sugar (or sweetener) and 1 tablespoon cinnamon. Set aside.
- Prepare the bread batter:
- In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix together applesauce, honey, egg, and vanilla extract. Stir in Greek yogurt.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the finely chopped apple.
- Assemble the bread: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar swirl mixture on top. Add the rest of the batter, then sprinkle the remaining cinnamon-sugar mixture on top. Use a knife or a skewer to swirl the cinnamon mixture through the batter.
- Bake: Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Optional glaze: While the bread is cooling, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the cooled bread once it’s out of the pan.
