Ingredients:

For the bread:

For the glaze (optional):

  • 1/4 cup powdered sugar or powdered sweetener
  • 1-2 teaspoons milk (or almond milk)
  • 1/4 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Make the cinnamon swirl: In a small bowl, combine 2 tablespoons brown sugar (or sweetener) and 1 tablespoon cinnamon. Set aside.
  3. Prepare the bread batter:
    • In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
    • In another bowl, mix together applesauce, honey, egg, and vanilla extract. Stir in Greek yogurt.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
    • Fold in the finely chopped apple.
  4. Assemble the bread: Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar swirl mixture on top. Add the rest of the batter, then sprinkle the remaining cinnamon-sugar mixture on top. Use a knife or a skewer to swirl the cinnamon mixture through the batter.
  5. Bake: Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Optional glaze: While the bread is cooling, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the cooled bread once it’s out of the pan.
  7. Serve: Slice and enjoy!
