- 2 cups green cabbage, chopped
- 1 large onion, diced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 2 cups zucchini, chopped
- 1 red bell pepper, chopped
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 3 cups vegetable broth (low-sodium if preferred)
- 2 cups water
- 1 can (14.5 oz) diced tomatoes (no salt added)
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare Vegetables:
Chop all the vegetables into bite-sized pieces. - Sauté Aromatics:
In a large pot, spray with a bit of cooking spray and heat over medium heat. Add onions, garlic, and celery, and sauté until fragrant and softened, about 3–4 minutes. - Add Vegetables and Broth:
Add the carrots, cabbage, bell pepper, zucchini, and green beans to the pot. Stir to combine. - Add Liquids and Seasoning:
Pour in the vegetable broth, water, and diced tomatoes (with their juices). Add Italian seasoning, smoked paprika (if using), salt, and pepper. Stir well. - Simmer the Soup:
Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 25–30 minutes, or until all the vegetables are tender. - Adjust Seasoning:
Taste and adjust salt and pepper as needed. If you prefer a stronger flavor, add more Italian seasoning or a splash of lemon juice. - Serve:
Ladle the soup into bowls and garnish with fresh parsley. Enjoy hot!
Tips:
- Make It Spicy: Add a pinch of red pepper flakes or a dash of hot sauce for some heat.
- Add Protein (Optional): If you want to make it a complete meal, add cooked shredded chicken, turkey, or beans, keeping track of the points if needed.
- Storage: This soup stores well. Refrigerate for up to 5 days or freeze in portions for up to 3 months.
