WW 0 Point Cabbage Soup

Ingredients:

  • 2 cups green cabbage, chopped
  • 1 large onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups zucchini, chopped
  • 1 red bell pepper, chopped
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 3 cups vegetable broth (low-sodium if preferred)
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare Vegetables:
    Chop all the vegetables into bite-sized pieces.
  2. Sauté Aromatics:
    In a large pot, spray with a bit of cooking spray and heat over medium heat. Add onions, garlic, and celery, and sauté until fragrant and softened, about 3–4 minutes.
  3. Add Vegetables and Broth:
    Add the carrots, cabbage, bell pepper, zucchini, and green beans to the pot. Stir to combine.
  4. Add Liquids and Seasoning:
    Pour in the vegetable broth, water, and diced tomatoes (with their juices). Add Italian seasoning, smoked paprika (if using), salt, and pepper. Stir well.
  5. Simmer the Soup:
    Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 25–30 minutes, or until all the vegetables are tender.
  6. Adjust Seasoning:
    Taste and adjust salt and pepper as needed. If you prefer a stronger flavor, add more Italian seasoning or a splash of lemon juice.
  7. Serve:
    Ladle the soup into bowls and garnish with fresh parsley. Enjoy hot!

Tips:

  • Make It Spicy: Add a pinch of red pepper flakes or a dash of hot sauce for some heat.
  • Add Protein (Optional): If you want to make it a complete meal, add cooked shredded chicken, turkey, or beans, keeping track of the points if needed.
