This Easy Ceviche recipe is packed with fresh shrimp, tomatoes, red onion, fresh cilantro, jalapenos, avocados-and marinaded in fresh citrus juice-it’s healthy and delicious!

Ingredients:

1 lb. cooked shrimp, peeled and deveined

1/4 cup fresh lemon juice, about two lemons

1/4 cup fresh lime juice, about three limes
-
1/2 cup fresh squeezed orange juice
-
3 Roma tomatoes, diced
-
2 jalapeno peppers, seeds and vein removed, minced
-
1/2 cup fresh cilantro, chopped
-
1/4 cup red onion, chopped
-
1 small avocado, pitted and diced (optional)

kosher salt and black pepper, to taste
Instructions:

Dice the shrimp into 1/2 inch cubes and transfer to a medium size mixing bowl. Set aside.

In a small mixing bowl, whisk together the lemon, lime and orange juice to combine.

Pour 1/2 cup of the citrus juice over the shrimp and toss to combine.

Cover and marinate in the fridge for 15 minutes.

After the shrimp has marinated, add the diced tomatoes, jalapenos, cilantro, and red onion.

Toss the ingredients in the remaining citrus juice and allow to marinade for an additional 10 minutes.

Stir in the avocado, mangoes, or cucumbers, if desired. Season with salt and pepper, to taste.

Serve on top of romaine lettuce, on a tostada, or with tortilla chips. This is best eaten the same day it’s prepared.
