🍞 Mediterranean Low-Carb Yogurt Bread

🧺 Ingredients

  • 1½ cups full-fat Greek yogurt (unsweetened, strained)

  • 3 large eggs, room temperature

  • 1½ cups almond flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 tablespoon olive oil

  • 1 teaspoon apple cider vinegar (helps rise)

Optional Mediterranean Add-ins

  • 1 teaspoon dried oregano or thyme

  • 2 tablespoons sesame seeds

  • 2 tablespoons ground flaxseed

  • Pinch of garlic powder


👩‍🍳 Instructions

  1. Preheat oven to 170°C / 340°F. Line or grease a small loaf pan.

  2. In a bowl, whisk eggs until light and slightly frothy.

  3. Add Greek yogurt, olive oil, and vinegar; mix until smooth.

  4. Stir in almond flour, baking powder, salt, and any herbs/seeds.

  5. Pour batter into the prepared loaf pan.

  6. Bake 40–45 minutes, until golden and a toothpick comes out clean.

  7. Cool completely before slicing (important for texture).


🌿 Mediterranean Serving Ideas

  • Toast lightly and drizzle with extra-virgin olive oil

  • Top with feta, olives, and tomatoes

  • Serve alongside soups, salads, or mezze
