CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH
Ingredients:
6 thin-sliced chicken breasts
1 small bag fresh baby spinach
1 large package sliced mushrooms
1 container green onion cream cheese
8 oz shredded mozzarella cheese
1/4 cup olive oil
1/2 cup chicken broth
1 dash pepper
1 dash herb and garlic seasoning
Instructions:
Preheat oven to 375°F (190°C).
Sauté mushrooms in olive oil over medium heat until tender, about 5 minutes. Add spinach and cook just until wilted.
Layer chicken breasts in a greased baking dish. Season with pepper and herb & garlic seasoning.
Spread the green onion cream cheese evenly over the chicken.
Add the spinach and mushroom mixture on top of the cream cheese layer.
Pour chicken broth over everything to keep it moist while baking.
Top with shredded mozzarella cheese.
Bake uncovered for 25–30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
Let it rest for 5 minutes before serving.
