🌿 Ingredients

Base

  • 1 cup cottage cheese (full-fat or low-fat)

  • 1 large apple, diced (Honeycrisp or any sweet-crisp apple)

  • 1 large egg

  • 1–2 tbsp honey or maple syrup (optional; or use ½ tsp stevia)

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of nutmeg

  • Pinch of salt

Topping (Optional but delicious!)

  • Extra cinnamon

  • A drizzle of honey

  • Chopped nuts (walnuts, almonds, pecans)

  • A spoon of Greek yogurt

  • Fresh berries

  • A sprinkle of oats or granola (Mediterranean-friendly if whole-grain)


🥣 Instructions

1. Preheat

  • Preheat your oven to 180°C (350°F).

2. Prepare the apples

  • Dice the apple into small chunks.

  • Toss with a sprinkle of cinnamon.

  • Microwave 1 minute or sauté in a pan for 2–3 minutes to soften (optional but makes it extra cozy!).

3. Mix the base

In a bowl, whisk together:

  • egg

  • cottage cheese

  • vanilla

  • cinnamon

  • salt

  • honey/maple syrup (if using)

Then fold in the softened apples.

4. Fill baking bowls

  • Divide the mixture into 2 small ramekins or one small baking dish.

5. Bake

  • Bake 20–25 minutes, until the top is golden and the center is set.

  • It will puff slightly like a mini cheesecake and settle as it cools.

6. Serve warm

Top with:

  • chopped nuts

  • extra cinnamon

  • a drizzle of honey

  • berries

  • a spoon of Greek yogurt (more protein!)
