🍎 Baked Apple Cinnamon Cottage Cheese Breakfast Bowls

🌿 Ingredients
Base
1 cup cottage cheese (full-fat or low-fat)
1 large apple, diced (Honeycrisp or any sweet-crisp apple)
1 large egg
1–2 tbsp honey or maple syrup (optional; or use ½ tsp stevia)
1 tsp vanilla extract
½ tsp cinnamon
Pinch of nutmeg
Pinch of salt
Topping (Optional but delicious!)
Extra cinnamon
A drizzle of honey
Chopped nuts (walnuts, almonds, pecans)
A spoon of Greek yogurt
Fresh berries
A sprinkle of oats or granola (Mediterranean-friendly if whole-grain)
🥣 Instructions
1. Preheat
Preheat your oven to 180°C (350°F).
2. Prepare the apples
Dice the apple into small chunks.
Toss with a sprinkle of cinnamon.
Microwave 1 minute or sauté in a pan for 2–3 minutes to soften (optional but makes it extra cozy!).
3. Mix the base
In a bowl, whisk together:

cottage cheese
vanilla
cinnamon
salt
honey/maple syrup (if using)
Then fold in the softened apples.
4. Fill baking bowls
Divide the mixture into 2 small ramekins or one small baking dish.
5. Bake
Bake 20–25 minutes, until the top is golden and the center is set.
It will puff slightly like a mini cheesecake and settle as it cools.
6. Serve warm
Top with:

a drizzle of honey
berries
a spoon of Greek yogurt (more protein!)
