🌿 Mediterranean Creamy Asparagus Bake

(Grandma-style, rich, comforting & absolutely irresistible!)

Ingredients

  • 20–25 asparagus spears, trimmed

  • 2 tbsp olive oil or butter

  • 2 tbsp flour

  • 2 cups warm milk

  • ½ cup grated Parmesan or mozzarella

  • ½ cup extra mozzarella (for topping)

  • Salt & black pepper

  • ½ tsp garlic powder (optional)

  • Pinch nutmeg (optional)

  • Fresh thyme or oregano


Instructions

1. Prepare the asparagus

  • Wash well, trim the tough ends.

  • Optional: Blanch 2 minutes in boiling water and place in ice water (keeps them bright green).


2. Make the creamy Mediterranean sauce

  1. In a pot, heat the olive oil or butter.

  2. Add flour and whisk for 1 minute to make a smooth paste.

  3. Gradually add warm milk while whisking.

  4. Cook until the sauce thickens (3–5 min).

  5. Add:

    • Grated Parmesan

    • Salt

    • Pepper

    • Garlic powder

    • Pinch nutmeg

The sauce should be silky and creamy.


3. Assemble

  • Pour the creamy sauce into a baking dish.

  • Arrange asparagus neatly in a row (as in the photo).

  • Sprinkle extra mozzarella on top.

  • Add fresh thyme or oregano.


4. Bake

Bake at 200°C (390°F) for 20–25 minutes, until:

  • Golden around the edges

  • Bubbly

  • Asparagus is tender


Serve With

  • Chicken, salmon, or lamb

  • Fresh salad

  • Warm crusty bread

  • Couscous or quinoa
