🍗 Chicken Spinach & Mushroom Low-Carb Oven Dish

Mediterranean Style

🛒 Ingredients

  • 600 g (1.3 lb) chicken breast or thighs, cut into chunks

  • 2 tbsp extra-virgin olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 250 g (9 oz) mushrooms, sliced

  • 3 cups fresh spinach

  • ¾ cup cooking cream or heavy cream

  • ¼ cup Greek yogurt (for lighter Mediterranean creaminess)

  • ½ cup grated mozzarella (or mix with Parmesan)

  • 1 tsp dried oregano

  • ½ tsp thyme

  • ½ tsp smoked paprika

  • Salt & black pepper, to taste

  • Zest of ½ lemon (optional but lovely)


👩‍🍳 Instructions

1️⃣ Prepare the Base

  1. Preheat oven to 180°C (350°F).

  2. Heat olive oil in a skillet over medium heat.

  3. Sauté onion until soft, add garlic, cook 30 seconds.

  4. Add mushrooms and cook until browned and moisture evaporates.


2️⃣ Build the Sauce

  1. Stir in cream, Greek yogurt, oregano, thyme, paprika, salt & pepper.

  2. Simmer 2–3 minutes until slightly thick.

  3. Fold in spinach until just wilted.


3️⃣ Assemble

  1. Place chicken evenly in a lightly greased baking dish.

  2. Pour mushroom-spinach sauce over chicken.

  3. Sprinkle mozzarella on top and add lemon zest.


4️⃣ Bake

  • Bake uncovered 30–35 minutes, until chicken is cooked through and top is lightly golden.


5️⃣ Serve

  • Rest 5 minutes before serving

  • Garnish with parsley or basil

  • Optional drizzle of olive oil for extra Mediterranean flavor


🌿 Mediterranean Variations

  • Extra protein: add artichoke hearts

  • Dairy-lighter: use all Greek yogurt + a splash of broth

  • Keto: replace onion with leeks and use full-fat cream

  • Spicy: add chili flakes or a spoon of harissa


🥗 Serving Suggestions (Low-Carb)

  • Roasted zucchini or eggplant

  • Simple cucumber-olive salad

  • Cauliflower mash or sautéed greens
