🦐 Creamy Low-Carb Tuscan Shrimp – Mediterranean Style

This Tuscan-style shrimp is rich and creamy yet low-carb, made with olive oil, garlic, sun-dried tomatoes, spinach, and a light cream sauce inspired by Mediterranean flavors.
🫒 Ingredients

450 g (1 lb) large shrimp, peeled & deveined

Salt & black pepper, to taste

1 tablespoon olive oil
Tuscan Sauce

1 tablespoon olive oil
-
4 cloves garlic, minced
-
½ cup sun-dried tomatoes (oil-packed, drained & sliced)

1 cup heavy cream (or light cream for lighter version)

¼ cup grated Parmesan cheese

½ teaspoon dried oregano
-
½ teaspoon dried basil
-
¼ teaspoon chili flakes (optional)

2 cups fresh spinach
Optional Finish

Fresh basil or parsley, chopped

Lemon juice, to taste
🍳 Instructions

Season & Sear Shrimp
Season shrimp with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear shrimp 1–2 minutes per side until pink. Remove and set aside. -
Build the Sauce
In the same pan, add olive oil and garlic. Sauté until fragrant.
Stir in sun-dried tomatoes, oregano, basil, and chili flakes. -
Make It Creamy
Pour in cream and simmer 3–5 minutes until slightly thickened.
Stir in Parmesan until smooth. -
Add Spinach & Shrimp
Add spinach and cook until just wilted.
Return shrimp to the pan and simmer 2–3 minutes. -
Finish
Adjust seasoning. Add a squeeze of lemon juice if desired.
Garnish with fresh herbs.
