🐟 Crispy Bang Bang Salmon Bites (Mediterranean Twist)

🛒 Ingredients

For the Salmon

  • 1½ lb salmon fillet, skin removed, cut into bite-size cubes

  • 2 tbsp extra-virgin olive oil

  • ½ cup panko breadcrumbs (or almond flour for low-carb)

  • ¼ cup grated Parmesan cheese

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp dried oregano

  • Salt & black pepper, to taste

For the Mediterranean Bang Bang Sauce

  • ½ cup Greek yogurt

  • 2 tbsp olive-oil mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp honey

  • 1 tbsp fresh lemon juice

  • 1 small garlic clove, grated

  • Optional heat: pinch of chili flakes or harissa

Garnish (Optional)

  • Fresh parsley or dill, chopped

  • Lemon wedges


👩‍🍳 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Pat salmon dry and toss with olive oil, salt, and pepper.

  3. In a bowl, mix panko, Parmesan, paprika, garlic powder, and oregano.

  4. Coat salmon pieces evenly in the breadcrumb mixture and place on the baking sheet.

  5. Bake 12–15 minutes, flipping halfway, until crispy and cooked through.
    For extra crispiness, broil 1–2 minutes at the end.

  6. While salmon bakes, whisk all Bang Bang sauce ingredients until smooth.

  7. Drizzle sauce over salmon or serve on the side for dipping.

  8. Garnish with herbs and lemon juice before serving.

  • Wrap in warm pita with greens for a Mediterranean salmon wrap

🔁 Cooking Options

  • Air Fryer: 390°F (200°C) for 8–10 minutes, shaking halfway

  • Pan-Seared: Cook in olive oil over medium-high, 2–3 minutes per side

  • Low-Carb/Keto: Use almond flour & skip honey
