🥒 Crispy Mediterranean Parmesan Zucchini Rounds

Ingredients

  • 2 medium zucchinis, sliced into ¼-inch (½ cm) thick rounds

  • 2 tbsp extra virgin olive oil

  • ½ cup grated Parmesan cheese (or a mix of Parmesan + pecorino for stronger flavor)

  • ¼ cup breadcrumbs (or almond meal for gluten-free)

  • ½ tsp garlic powder

  • ½ tsp dried oregano

  • ½ tsp dried thyme or basil

  • Salt and freshly ground black pepper, to taste

  • Optional garnish: chopped fresh parsley or dill, and a squeeze of lemon


Instructions

🥣 1. Preheat Oven

Preheat your oven to 220°C / 425°F.
Line a baking tray with parchment paper or lightly brush it with olive oil.


🍋 2. Prepare the Coating

In a shallow bowl, mix together:

  • Parmesan cheese

  • Breadcrumbs

  • Garlic powder

  • Oregano

  • Thyme or basil

  • Salt and pepper


🫒 3. Coat the Zucchini

  1. Place zucchini slices in a bowl.

  2. Drizzle with olive oil and toss until evenly coated.

  3. Dip each slice into the Parmesan-breadcrumb mixture, pressing lightly so it sticks.

  4. Arrange slices in a single layer on the prepared baking tray (don’t overlap).


🔥 4. Bake

Bake for 18–22 minutes, flipping halfway through, until golden and crispy on both sides.
If you like extra crunch, broil for the last 1–2 minutes.


🌿 5. Serve

Remove from the oven and sprinkle with fresh parsley or dill.
Add a light squeeze of lemon for brightness.

  • Serve as an appetizer with a Mediterranean yogurt dip (Greek yogurt, lemon, garlic, and herbs).

  • Pair with grilled fish, chicken, or roasted vegetables.

Optional Mediterranean Dip

Ingredients:

  • ½ cup Greek yogurt

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • 1 tsp lemon juice

  • 1 tbsp chopped fresh dill or mint

  • Salt and pepper to taste

Mix everything in a small bowl and serve chilled beside your zucchini rounds.
