🥒 Crispy Mediterranean Parmesan Zucchini Rounds
Ingredients

2 medium zucchinis, sliced into ¼-inch (½ cm) thick rounds

2 tbsp extra virgin olive oil

½ cup grated Parmesan cheese (or a mix of Parmesan + pecorino for stronger flavor)

¼ cup breadcrumbs (or almond meal for gluten-free)

½ tsp garlic powder

½ tsp dried oregano

½ tsp dried thyme or basil

Salt and freshly ground black pepper, to taste

Optional garnish: chopped fresh parsley or dill, and a squeeze of lemon
Instructions
🥣 1. Preheat Oven
Preheat your oven to 220°C / 425°F.
Line a baking tray with parchment paper or lightly brush it with olive oil.
🍋 2. Prepare the Coating
In a shallow bowl, mix together:

Thyme or basil

Salt and pepper

Place zucchini slices in a bowl.

Drizzle with olive oil and toss until evenly coated.

Dip each slice into the Parmesan-breadcrumb mixture, pressing lightly so it sticks.

Arrange slices in a single layer on the prepared baking tray (don’t overlap).

Bake for 18–22 minutes, flipping halfway through, until golden and crispy on both sides.
If you like extra crunch, broil for the last 1–2 minutes.

Remove from the oven and sprinkle with fresh parsley or dill.
