Ingredients
Potato Bombs

3 large potatoes, peeled & boiled

1 cup shredded mozzarella (or Mediterranean mix: mozzarella + feta)

¼ cup grated Parmesan

2 tbsp chopped parsley

1 tsp paprika
-
½ tsp black pepper
-
Salt, to taste

1 egg
-
½ cup breadcrumbs (use gluten-free if needed)
Garlic Butter

3 tbsp butter
-
3 garlic cloves, minced

1 tbsp olive oil
-
1 tbsp chopped parsley
Instructions

Mash potatoes until smooth. Let cool slightly.

Add egg, mozzarella, Parmesan, parsley, paprika, pepper, and salt. Mix well.

Scoop small portions, place extra cheese in center if desired, and roll into balls.

Roll each ball in breadcrumbs for extra crispiness.

Place on a lined baking tray. Lightly brush or spray with olive oil.

Bake at 200°C (400°F) for 22–25 minutes, turning once, until golden and crispy.

Air fryer option: 190°C (375°F) for 12–15 minutes.

Make garlic butter: melt butter with olive oil, add garlic, sauté 30 seconds. Stir in parsley.
