For the Mediterranean Dressing

1 tbsp lemon juice

1 tsp dried oregano

Black pepper

½ tsp honey (optional)

1. Prepare the dressing
In a small bowl, whisk together:

Set aside.
2. Assemble the skewers
On small wooden or bamboo skewers/toothpicks, layer:
