🌿 Elegant Mediterranean Feta, Cucumber & Kalamata Olive Skewers

Ingredients (makes 15–20 small skewers)

  • 1 block of firm feta cheese (cut into 1-inch cubes)

  • 1 large cucumber (cut into thick half-moon or cube pieces)

  • 15–20 Kalamata olives (pitted)

  • 10–15 cherry tomatoes (optional but beautiful)

  • Fresh basil or mint leaves (optional)

For the Mediterranean Dressing

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1 tsp dried oregano

  • Black pepper

  • ½ tsp honey (optional)


👩‍🍳 Instructions

1. Prepare the dressing

In a small bowl, whisk together:

  • Olive oil

  • Lemon juice

  • Oregano

  • Black pepper

  • Honey (optional for balance)

Set aside.

2. Assemble the skewers

On small wooden or bamboo skewers/toothpicks, layer:

  1. Cucumber piece

  2. Feta cube

  3. Kalamata olive

  4. Cherry tomato (optional)

  5. Small mint/basil leaf (optional for aroma)

Repeat until all skewers are done.

3. Drizzle with dressing

Arrange the skewers on a serving plate.
Drizzle lightly with the Mediterranean dressing.
Sprinkle extra oregano if you like.

  • A side of tzatziki

  • Warm pita bread

  • Hummus or baba ganoush

  • Roasted peppers
